Pork and Avocado Mix

½ cup tomato passata
1 pound pork, ground

1 avocado, peeled, pitted and roughly cubed
1 tomato, cubed
Salt and black pepper to the taste
8 eggs, whisked
2 spring onions, chopped
1 tablespoon avocado oil
½ teaspoon cayenne pepper
1 tablespoon chives, chopped
Heat up a pan with the oil over medium heat, add the spring onions, stir and cook for
2 minutes.
Add the meat, tomato and the cayenne pepper, toss and brown for 5 minutes more.
Add the tomato passata, the avocado, eggs, salt and pepper, toss, cook over medium
heat for 15 minutes more, divide into bowls and serve for breakfast.
