2 spring onions, chopped
½ pound white mushrooms
Salt and black pepper to the taste
4 eggs, whisked
1 tablespoon olive oil
½ teaspoon cumin, ground
1 tablespoon cilantro, chopped
Heat up a pan with the oil over medium heat, add the spring onions and the
mushrooms, toss and sauté for 5 minutes.
Add the eggs and the rest of the ingredients, toss gently, spread into the pan, cover it
and cook over medium heat for 15 minutes.
Slice the omelet, divide it between plates and serve for breakfast.
