1 pound zucchinis, sliced
1 tablespoon olive oil
2 garlic cloves, minced
1 tablespoon mint, chopped
A pinch of salt and black pepper
¼ cup veggie stock
1. Heat up a pan with the oil over medium high heat, add the garlic
and sauté for 2 minutes.
2. Add the zucchinis and the other ingredients, toss, cook everything
for 10 minutes more, divide between plates and serve as a side
