Green Beans Salad
This is perfect for a Ketogenic lunch!
Preparation time: 10 minutes
Cooking time: 15 minutes
Servings: 4
1 pound green beans, trimmed and halved
1 tablespoon olive oil
2 garlic cloves, minced
2 spring onions, chopped
½ cup tomato passata
A pinch of salt and black pepper
1 cup cherry tomatoes, halved
1 cup baby spinach
1 tablespoon lime juice
1 tablespoon balsamic vinegar
½ teaspoon cumin, ground
1. Heat up a pan with the oil over medium heat, add the garlic and the
spring onions, stir and sauté for 2 minutes.
2. Add the green beans and the other ingredients, bring everything to
a simmer, cook over medium heat for 12 minutes, divide into
