Chili Tomatoes and Eggs
This recipe is perfect for breakfast!
Preparation time: 10 minutes
Cooking time: 20 minutes
Servings: 4
Ingredients:
1 tablespoon ghee, melted
2 shallots, chopped
2 chili peppers, minced
Salt and black pepper to the taste
4 tomatoes, cubed
4 eggs, whisked
1 teaspoon sweet paprika
1 tablespoon chives, chopped
Directions:
Heat up a pan with the ghee over medium heat, add the shallots and the chili peppers,
toss and sauté for 5 minutes.
Add the tomatoes and the other ingredients except the eggs, toss and cook everything
for 5 minutes more.
Add the eggs, toss a bit, cook the mix for another 5 minutes, divide between plates
and serve.
