Chicken Meatballs and Sauce

Servings: 4
For the sauce:
2 shallots, chopped
1 tablespoon olive oil
1 cup tomato passata4 garlic cloves, minced
1 tablespoon balsamic vinegar
For the meatballs:
2 pounds chicken meat, skinless, boneless and ground
2 eggs, whisked
2 spring onions, chopped
2 tablespoons almond flour
2 tablespoons cilantro, chopped
1. In a bowl, combine the meat with the eggs, spring onions, flour and the
cilantro, stir well and shape medium meatballs out of this mix.
2. Heat up a pan with the oil over medium heat, add the meatballs, brown
them for 2 minutes on each side and transfer them to a plate.
3. Heat up the pan again over medium heat, add the shallots and the garlic,
stir and cook for 5 minutes.
4. Add the passata and the vinegar, stir and simmer the sauce for 3
minutes more.
5. Add the meatballs, cook everything for 15 minutes more, divide into
bowls and serve for lunch.
