Chicken and Leeks Pan

Ingredients:
2 tablespoons olive oil
1 pound chicken breast, skinless, boneless and cut into strips
2 shallots, chopped
1 cup mozzarella cheese, shredded
2 leeks, sliced
½ cup veggie stock
1 tablespoon heavy cream
1 teaspoon sweet paprika
Salt and black pepper to the taste
Directions:
1. Heat up a pan with the oil over medium heat, add the shallots, stir
and cook for 3 minutes.
2. Add the meat and the leeks, stir and brown for 7 minutes more.
3. Add the other ingredients except the cheese and stir.
4. Sprinkle the cheese on top, introduce the pan in the oven and cook
everything at 400 degrees F for 10 minutes more.
5. Divide the mix between plates and serve.
